This is a recipe I found in a magazine a couple of years ago. I no longer have the original recipe but have modified it to my own liking.
1 lb frozen shrimp
1 red pepper
1/2 onion
1/2 tsp minced garlic
1/2 tsp cajun spice
fresh parsley
Saute onion and red pepper in frying pan until soft. (I use butter flavored cooking spray to saute with). Add minced garlic and cook for several minutes. Run the shrimp under water for a couple of minutes to remove any ice then add to the onions and peppers. Add Cajun spice and cook for 5-7 minutes until the shrimp is done. Sprinkle with fresh parsley and serve.
I serve this with a salad.
